Koke Honey - Ethiopia, Honey

$22.50

Our first 2024 offering from Ethiopia is a stunning lot from two washing stations near the Koke Kebele. Located in the heart of Yirgacheffe region of the Gedeo zone, coffees from the Koke washing station exhibit the intense fruited-sweetness and delicate florals we love about Ethiopian coffees. You can expect to find expressive tropical fruit characteristics resulting from the light fermentation of this coffee that reminds us of passionfruit and grapefruit. This coffee is abundantly sweet and pleasantly bright.

It's easy to forget that the origins of our coffees are more than just a product label or a set of expectations about the flavor of a particular coffee. But coffee is a product that comes from somewhere else. It's a global commodity that is produced in the global South and distributed, mostly, to the global North. In other words, coffee, like nearly all other natural resources, is subject to intense challenges that make our access to it very difficult - and this year has been exceptionally challenging. Likewise, whether we see it or not, the constellation of lingering impacts from colonialism, exploitation, and climate change that affect the production and exchange of all resources can all be found at work in our industry today. This compels us to recognize and try to respond to the disproportionate impacts faced at origin. This year as access to coffee feels more precarious than ever, we are fortunate to enjoy fresh crop from Ethiopia, a country that is facing unique and enormous challenges. This lot is made available to us by people who inspire us to be transparent, reflective, and ever more committed to climate and economic sustainability. With all this in mind, we encourage everyone to reflect on these dynamics with careful gratitude and sense of hope for the possibility of another world while enjoying this coffee.

"This lot of Koke Honey was sourced from a total of around 1200 smallholder farmers from Birbes Kela, Koke, Konga, Wedessa, and Tisho kebeles. Farmers bring their harvested cherries for processing at the Koke and Birbes Kele washing stations. Harvested cherries are fermented in-cherry for two days prior to being pulped. The pulped coffee is then dried on raised beds to its optimal humidity." - Ally Coffee
