Decaf Guatemala | La Resistencia, Swiss Water Process
La Resistencia is a blend of coffees from producers in the La Resistencia group of smallholders that we began working with in 2024. These producers are known for their excellent coffees as much as they are for their inspiring resistance to the Escobal Silver mine in recent decades. This decaf blend has undergone a Swiss Water Process to decaffeinate the coffee while preserving the intrinsic quality of the seed. We find this cup to be comforting and sweet with notes of milk chocolate, nougat, almond, and tangerine.

As we always seek to purchase as much coffee as possible from the Cafe Colis Resistencia group, passing certain lots through the decaf plant in Burnaby is a great way for us to increase our purchase commitment also to buy coffees that may be slightly outside of our physical parameters for selling as micro-lots. That means coffees that test slightly out of the range on humidity or water activity for example can still be purchased at great prices.
The benefit as well is that we’re able to provide fresh decaf coffee to our roaster partners. As it can be very difficult to find quality decaf, let alone fresh decaf, these La Resistencia Decaf lots ensure that a just price was paid to the producer and that you as a roaster have a traceable decaf made of high quality, fresh coffee!” - Semilla
