Miramar Geisha - Costa Rica, Don Eli
This year marks five years of friendship with the Montero family. When we opened our doors in 2022, theirs were the first coffees on our shelf and have remained a high point in our year each Fall. This year we are fortunate enough to share Don Eli’s most prized Geisha with our community. It’s easy to see why this coffee is so remarkable - You’ll find signature flavors of Geisha like mango candy and round apricot, as well as processing notes of tropical guava and watermelon. This coffee is absolutely juice-like in its profile and juicy in tactile. For us, each Don Eli coffee is special. But this natural Geisha from Don Eli is one we never thought we could have access to: one of the world’s most sought after varieties grown by friends across the continent. For us, it represents a deep sense of gratitude and achievement in light of our history as a cooperative. Here’s to gathering our reflections on the past and casting them ahead to new horizons. About this coffee:
Miramar is a very special section of the overall La Pastora Farm that the Monetero Family nurture. It is the highest point in the farms and is up over the other side of the La Pastora Ridge. It gets a great view of the Pacific Ocean on clear days. Hence the name “Miramar” or “Ocean View”. Carlos helped plant more new and rare varieties in this area due to its unique micro climate and insane altitude. A few years late this young fruit started to produce and Jacob began using it for his most elite coffees to process.
Jacob calls his Geisha Natural Process SDN for slow dry natural. The coffee is constantly under shade during drying. When processing naturals it’s very important for Jacob to pay special attention to the initial drying phase. So, for the first few days the cherries are moved constantly in order to prevent too much fermentation. After a week, when the cherries look dryer they move them with a rake-like tool about every hour during the day and it takes roughly between 22 days and one month, depending on the weather, for the coffee to dry to its optimal moisture content. It’s very important for Jacob and Carlos after drying is done to let the coffee rest in the warehouse for about one month, especially the Natural process which seems to develop a lot of flavors while being in dried cherry for a month or so
